            "abstractNote": "This article provides an overview of the emergence of the field of public health nutrition in the late 19th and early 20th centuries. After examining the global trends that led nations to take an interest in the nutritional status of their citizens, it explores three ways in which health authorities began to implement nutrition in public health: through nutrition education and the development of dietary standards, through mass surveillance for malnourishment, and through the provision of direct nutritional support. While all of these approaches were broadly utilized, this article focuses on how they emerged and evolved in the United States, as the specifics of policy and practice varied with national and regional context. The final section considers briefly how these early developments have shaped public health nutrition into the 21st century.",

            "abstractNote": "The influence of a range of actors is discernible in nutrition projects during the period after the Second World War in the South Pacific. Influences include: international trends in nutritional science, changing ideas within the British establishment about state responsibility for the welfare of its citizens and the responsibility of the British Empire for its subjects; the mixture of outside scrutiny and support for projects from post-war international and multi-governmental organisations, such as the South Pacific Commission. Nutrition research and projects conducted in Fiji for the colonial South Pacific Health Service and the colonial government also sought to address territory-specific socio-political issues, especially Fiji’s complex ethnic politics. This study examines the subtle ways in which nutrition studies and policies reflected and reinforced these wider socio-political trends. It suggests that historians should approach health research and policy as a patchwork of territorial, international, and regional ideas and priorities, rather than looking for a single causality.",

            "abstractNote": "From the early 1950s to the early 1970s, international nutritionists considered childhood protein malnutrition the world's most serious public health threat. By 1974, many believed that this \"protein gap\" had been exaggerated. Two questions remain: why protein, and why this period? Four converging developments created a network that maintained protein's \"charisma\": new food technology, a growing international health infrastructure, the nominal demise of eugenics, and new geopolitical priorities in a world shaped by both the Cold War and decolonization struggles. A transnational network of nutrition experts argued that protein deficiencies could explain bodily and population differences that would have, in an earlier era, been attributed to race or inheritance. Protein malnutrition could help explain \"backward\" economies and cultures, they claimed, and protein supplementation would help spur development. The protein gap theory thus framed difference in the language of modernization theory, but left intact older hierarchies of bodies, nations, and races.",

            "abstractNote": "Existing scholarship on prison diets has emphasised the role of food and its restriction as a key aspect of the deterrent system of prison discipline introduced in the 1860s. Here we suggest that a strong emphasis was placed on dietary regulation after the establishment of the reformist, but also ‘testing’, separate system of confinement in the mid-nineteenth century. While the impact of diet on the physical health of prisoners was a major concern, we argue that the psychological impact of food was also stressed, and some prison administrators and doctors argued that diet had an important protective function in preserving inmates’ mental wellbeing. Drawing on a wide range of prison archives and official reports, this article explores the crucial role of prison medical officers in England and Ireland in implementing prison dietaries. It highlights the importance and high level of individual adaptations to dietary scales laid down centrally, as a means of utilising diet as a tool of discipline or as an intervention to improve prisoners’ health. It examines the forays of some prison doctors into dietary experiments, as they investigated the impact of different dietaries or made more quotidian adjustments to food intake, based on local conditions and food supplies. The article concludes that, despite central policies geared to establishing uniformity and interest in new scientific discourses on nutrition, a wide range of practices were pursued in individual prisons, mostly shaped by practical rather than scientific factors, with many prison medical officers asserting their autonomy in making dietary adjustments.",

William Prout, a physician in London, is supposed to be the first who developed a concept of nutrients or alimentary substances as he called them. The paper introduces Prout’s life, states his work and contributions to the development of chemistry and concentrates on Prout’s use of chemical analysis as a way of understanding human digestion. It will be shown in detail how he came to introduce the term “alimentary substance”. The aim of the paper is to show from the point of view of the history of knowledge that nutrients are not so much the building blocks of our food but merely experimental laboratory entities. Hence, as technologically produced objects of knowledge they cannot be considered independently from the style of research, theory or apparatus, which brought them into life.",

These debates do not allow a full appreciation of the heritage of the ideas that are part of nutrition discourse. Using Foucault's work on governmentality it is shown here that ideas embedded in nutrition emerged from both scientific knowledges which sought to understand and manage the eating habits of populations, and from moral issues which problematize individual food choices. The result is a knowledge of food that can be understood as a ‘discipline' in two senses: first as field of scientific endeavour and second as a form of moral correction.",

            "abstractNote": "This article analyzes the interrelationship between expert systems and the creation of public trust in food production in the late nineteenth and early twentieth centuries, focusing on the roles of scientific knowledge and elites in academia, government, and business. The nutrient paradigm of the mid nineteenth century played a crucial part in this history, facilitating new practices of control and standardization based on measurable, empirical ‘facts.’ This article compares the different approaches, power constellations, and results of the struggle for improved and reliable food quality in Germany, Austria, Switzerland, and the USA. Scientists, especially chemists, the food industries, and public authorities at the local, regional, and federal levels established a structure of science‐based standardization and trust‐building, which acted on behalf of the consumer in enforcing their own ‘objective’ ideas about safe products and additives.",
