Describves the way in which locals in Germany were recruited by British secret service prior to outbreak of WW I:

simple farm folk were asked to count numbers of trains they saw, types of people on the trains, and types of products which the trains might be carrying (trying to figure out if Germany was MOBILIZING militarily)

Note the level of detail:  what might soldiers eat?  Things that are easily prepared, high in protein, easy to transport -- beans, etc.

We're told:

Landau was able to contact a former railwayman who lived at Fourmies alongside the line and who agreed to help.  It was a real family endeavour.  \"everyone in this humble household,\" wrote Landua, \"did their share of watching.\"  during the day it was the man's 14 and 13 year old sisters;  at night he and his wife took over.  \"the composiion of the trains was jotted down in terms of comestibles:  beans for soldiers, chicory for horses, coffee for cannons and so on.\"  reports were 'hidden in the hollow handle of a kitchen broom, which was left innocently in its place in the corner.\"

from 23 sept. 1917, when this 'intelligence post' began operating, landue reckoned that 'not a single troop train was missed.'  getting the reports ascross the frontier involved the usual sleight of hand including a Belgain midwife whose job allowed her to travel around the countryside and whose special 'vocation' was the delivery of deadly spy reports, cuningly wrapped around the whale-bones of her corset.
